BANANA CHOCOLATE MUFFIN - SINGLE SERVING
For as long as I can remember, banana bread has been one of my top favourite snacks/treats.
This one has a bit of protein in it, is gluten free and still so dang delicious.
What you need?
1 large ripe banana
1 cup oat flour
1 egg
1 tsp baking powder
1 tsp cinnamon
1/2 scoop protein so about 3 tbsp
3 tbsp melted butter
1 tbsp swerve brown sugar or regular brown sugar - I used swerve
1/4 cup sugar free chocolate chips I used the brand Lillys
Directions:
Pre heat oven to 350F
Mix all ingredients at once, then added in the 1 mashed banana.
Then mix in the chocolate chips after batter is fully mixed
Portion into 2 small oven safe bowls/jars
Bake for 20-22 minutes, until tops are like photo shown below. Rounded and fluffy!
Let cool, I then melted about 1/4 cup of sugar free chocolates with a little peanut butter and drizzled on top. HOLY MOLY YALL. SO TASTY!
