BANANA CHOCOLATE MUFFIN - SINGLE SERVING

For as long as I can remember, banana bread has been one of my top favourite snacks/treats.


This one has a bit of protein in it, is gluten free and still so dang delicious.


What you need?

  • 1 large ripe banana

  • 1 cup oat flour

  • 1 egg

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • 1/2 scoop protein so about 3 tbsp

  • 3 tbsp melted butter

  • 1 tbsp swerve brown sugar or regular brown sugar - I used swerve

  • 1/4 cup sugar free chocolate chips I used the brand Lillys


Directions:

  • Pre heat oven to 350F

  • Mix all ingredients at once, then added in the 1 mashed banana.

  • Then mix in the chocolate chips after batter is fully mixed

  • Portion into 2 small oven safe bowls/jars

  • Bake for 20-22 minutes, until tops are like photo shown below. Rounded and fluffy!


Let cool, I then melted about 1/4 cup of sugar free chocolates with a little peanut butter and drizzled on top. HOLY MOLY YALL. SO TASTY!
